Rooibos leaves and fine stems (Aspalathus linearis; Fabaceae) are increasingly enjoyed as
herbal tea, largely in fermented (oxidised) red-brown form, but also in unfermented
(unoxidised) green form. Rooibos is rich in antioxidant polyphenols, with the
